Can’t Fail Peanut Butter Fudge Recipe

Another one of my favorite Holiday candy recipes is Peanut Butter Fudge. I tried recipe after recipe for years and years and they were always either very runny and didn’t set up or they were grainy and yucky. Then one day I had the idea to just convert my grandmother’s 5 Minute Can’t Fail Fudge recipe into my own 5 Minute Can’t Fail Peanut-Butter Fudge. And it worked! This fudge is somewhat heavy but very creamy and delicious.

Can’t Fail 5 Minute Peanut-Butter Fudge

Ingredients:

  1. 2/3 cup evaporated milk
  2. 1 1/2 cup granulated sugar
  3. 1/4 tsp salt
  4. 2 cups miniature marshmallows
  5. 2 cups Reese’s Peanut Butter Chips (you can probably use any brand but Reese’s is the best for this)
  6. 1/2 cup creamy peanut butter. (any brand but again, Reese’s is great in it!)
  7. 1 tsp vanilla extract

Directions: – photos at end

  1. Butter or spray with cooking spray an 8×8 baking dish.
  2. In large bowl, combine marshmallows, peanut butter chips and vanilla: set aside.
  3. Mix milk, sugar and salt in large non-stick saucepan, over low heat.
  4. When sugar is completely dissolved and not yet bubbling, add in 1/2 cup peanut butter and stir until melted.
  5. Raise heat to medium and bring sugar/peanut butter mixture to boil stirring CONSTANTLY for 5 minutes to avoid scorching. (TIP: start timing when it starts to bubble around the edges.) This mixture turns a medium brown with the peanut butter and looks somewhat like caramel.
  6. Remove from heat and immediately stir in marshmallows, peanut butter chips and vanilla from the bowl you set aside earlier.
  7. Stir vigorously. It will get very thick. You will not be able to pour this fudge into your dish.
  8. Scoop into prepared 8×8 baking dish.
  9. Press down evenly with a rubber spatula. The fudge should be very thick and able to pull away from the sides. Make sure you press it down evenly.
  10. Cool on wire rack for 10 minutes then transfer to refrigerator to finish cooling.
  11. Cut into squares and enjoy!

    Crystal, thanks for the can’t fail peanut butter fudge recipe. Interesting that you use both the peanut butter chips and the peanut butter. Could one use just the peanut butter?

      @Jeannie, This recipe was based on my grandmother’s 5 minute fudge recipe that uses chocolate chips. So I just substituted the chocolate chips with peanut butter chips. But it still wasn’t quite peanut-buttery enough so I added the additional peanut butter. I did try it with just the peanut butter but couldn’t get it to set up hard enough. Try it though! Or you could do just the peanut butter chips if they work better for you. That’s the joy of fudge, you can play around until you get it just the way you want it.
