Ok, so here I am on full day 1 of the 6 weeks to a Lean Green YOU bootcamp. So far, so good. I cooked a pot of pinto beans yesterday with NO salt or bacon grease which is the typical southern cooking method. I only seasoned them with onion and some no-salt-added herbs, crushed red pepper and black pepper. The beans themselves are really good and I plan on getting some leafy greens and making some no oil or salt Pico De Gallo to add on top as a dressing with the beans and maybe some cucumbers. That sounds really good to me. The broth of the beans is fairly bland so I don’t think I’ll be eating them like you would a bowl of beans. Plus we usually have beans like that with cornbread and I’m not having that so draining them and eating them on something is the best option right now.
So that was lunch and I’ll have a salad for supper. Money is tight this week so I can’t go to the grocery for everything I can have. There are some REALLY delicious sounding recipes in the bootcamp and I can’t wait until next week when I can go grocery shopping and really get all the good stuff. For now, beans and salads are good enough and i’m really excited! Tied, but excited.
