TO WARM SAUSAGE:

PEPPERS AND ONIONS
To skillet, add peppers and onions and cook 5 - 10 minutes or until tender
Remove from skillet and place in small bowl
Reserve any grease in skillet
SCRAMBLED EGGS - see notes below
Whisk eggs, milk, salt and pepper in large bowl
Scramble in reserved grease until done. Approx 8 - 10 minutes or until liquid is gone.
Crumble sausage patties into eggs and mix together.
TORTILLAS
To warm your tortillas, you can place them briefly in the warm skillet or for 30 seconds in the microwave.
Assemble burritos.
We like to do this buffet style with the peppers/onions, tomatoes, eggs/sausage, cheese, tomatoes and jalapenos in separate bowls.
Let each person add ingredients of choice to their tortilla.
Place ingredients of choice in center of tortilla
Fold in both ends and roll lengthwise.
Serve with picante sauce and enjoy!
Notes
If you have another method for scrambling your eggs, by all means do it your preferred way. We found that using 1/4 cup milk, whisking and then scrambling 8 - 10 minutes left the light and fluffy and added great flavor to the burritos.
