Instructions
Warm your liquid. Add the water or oat milk to a medium saucepan over medium heat. You want it warm but not boiling before the oats go in. Warming the liquid first helps the oats cook more evenly and gives you a creamier result.
Add the oats and spices. Stir in the rolled oats, cinnamon, nutmeg, ginger, and salt. Reduce the heat to medium-low and stir everything together. The kitchen will start smelling incredible within about ninety seconds. Let the oats cook, stirring occasionally, for about five to seven minutes.
Stir in the wolffia. Once the oats have mostly absorbed the liquid and the mixture has thickened, remove the pan from the heat and stir in the wolffia. If you are using fresh wolffia, it will dissolve almost instantly into the warm oats. If you are using dried, give it a gentle stir and let it sit for a minute to rehydrate slightly. You will barely notice it is there visually, and you definitely will not notice it in flavor.
Sweeten and finish. Add the maple syrup or honey and the vanilla extract. Taste it here. You can add a little more sweetener or cinnamon at this point based on your preference. This is the moment to make it yours.
Bowl and top. Divide the oatmeal between two bowls. Add your toppings while everything is still warm. The banana or apple adds brightness, the nuts add a satisfying crunch, and the drizzle of nut butter takes it from good to genuinely cozy.
Notes
A Note on Texture
If your oatmeal thickens too much, especially if it sits for a few minutes before eating, just stir in a splash of warm milk or water. Rolled oats continue to absorb liquid even after the heat is off, so a little extra at the end keeps the texture just right.
