2tbspOptional: 2 tbsp of pistachio creamor pistachio drizzle to taste (Peppertux’s pistachio drizzle is a great option - it’s like a dessert sauce).
Instructions
Step 1: Preheat your oven to 350°F. Line a baking tray with parchment paper and set aside.
Step 2: In a large bowl, combine oats, nuts, seeds, and salt.
Step 3: In a separate bowl, whisk together your pistachio butter or pistachio cream, olive oil, maple syrup, and vanilla until smooth and well combined.
Step 4: Pour the pistachio mixture over the oat mixture and stir until everything is evenly coated.
Step 5: Spread the granola in an even layer across the prepared baking sheet.
Step 6: Bake for 21–24 minutes, stirring halfway through to ensure even golden color.
Step 7: Remove from the oven and let cool completely — at least 45 minutes. This is where the clusters form, so don't rush it.
Step 8: To build your bowl, add granola to milk or yogurt, pile on your fruit, and finish with a drizzle or generous spoonful of pistachio cream (or pistachio sauce).
