One way I’ve found to stretch the protein in my meals, especially chicken dishes, is to either do a slow cooker meal like our Salsa Chicken or a casserole. Using the chicken shredded in a meal helps it go further and ensures everyone gets some.
Adding brown rice or noodles and vegetables like peas and carrots adds even more bulk to a dish. For a casserole, mix up some cooked shredded chicken , frozen vegetables, brown rice, a little chicken broth or stock and some thickened stock or gravy and seasonings and bake at 350 F for about 20 minutes and you’re all set!
