‘Tis the season for football and I have a recipe for a super quick and easy game time appetizer to share with you: Kielbasa Bites. These are “fully-loaded” but can be made low carb and sugar free as well – with the exception of sugar used when curing the meat! (see note)

We just bought and moved into a new home nearly 100 miles away from where we lived. On top of a mountain! We’re exhausted!

One way Clay likes to unwind is by relaxing in his recliner and watching some football. He’s been working pretty much non-stop along with the big move so he hasn’t had a lot of time to relax. Sunday’s have pretty much been his only days to sit down and that’s only after hauling water 10+ miles several times, getting some groceries for the week (an hour away) and doing chores around the house.

Then…. we finally get to sit and chill. I’m not so much of a football fan but I do enjoy sitting with him while he watches a big game. I usually make up some game time appetizers and the kids, Clay and I munch during the game. It’s fun!

Two of my go-to ingredients are Coca-Cola and Ritz Crackers.

One of the few stores near us (still 30 miles away) is Walmart. So that’s where we usually head to stock up on food and snacks. I keep Coca-Cola and Ritz Crackers in my pantry at all times! (I drink Zevia but keep soft drinks on hand for guests) These are staples for me. My mama ALWAYS had Ritz Crackers on hand and they were set out for any and every gathering. I have great memories of eating those buttery little bites of goodness with a big ‘ole hunk of cheese. MmmHmm!

Not only do we drink Coca-Cola but we cook with it too and it is included in my game time appetizer recipe, below.

Ok, so what is this recipe I keep talking about?

These are SO EASY to make and only take a few minutes. In a short time I can whip up a snack that is warm, cheesy and delicious.

I use skinless Kielbasa and slice into bite sizes pieces. Then I saute it off in a pan with a little Coca-Cola. My mom always used it to flavor a ham so I had the idea to try it in this recipe and it added so much great flavor.

Then, with half of the pieces, I add a slice of the Kielbasa to a Ritz Cracker, top with a slice of Colby/Jack cheese and Roma tomato. For the other half, instead of the Colby/Jack cheese, I use chive flavored cream cheese and the tomato. They are so good!

If you don’t want to assemble them all or if your guests are picky about their toppings, just get them all ready and set it out buffet style or make up a charcuterie board (this charcuterie board set would work well). Everyone can top them how they like. 😁

Ingredients  

  • 1 package Skinless Kielbasa
  • 1/4 cup Coca-Cola (to make this low carb and sugar free, see notes)
  • 1 lb Colby/Jack Cheese
  • 8 oz Chive Cream Cheese
  • Ritz Crackers

Instructions

  • Slice Kielbasa into bite sized pieces
  • Saute in skillet with 1/4 cup Coco-Cola until slightly browned
  • Add one slice onto a Ritz Cracker
  • Top with either Colby/Jack Cheese OR Chive Cream Cheese
  • Top with a slice of Roma tomato
  • Serve and Enjoy!

Notes

You can easily make this both low-carb and sugar free! To do so, simply replace the Coca-Cola with Zevia and replace the Ritz crackers with Cheese Whisps or, if you don’t mind carbs, use Mary’s Gone Crackers.

Pair the Game Time Kielbasa Bites with potato skins, maybe some 8-Hour Salad and an icy cold Coca-Cola and it won’t matter who’s playing or even who wins. You’ll be too busy munching to even care.

Oh, and if you don’t want to use meat, just make them without. The Ritz Crackers are delicious with any topping on them!
