Did you know April is National Grilled Cheese Month? Me either! My pals at Udi’s let me in on that little secret and sent me some of their gluten free bread so I could make myself one.

I <3 a great grilled cheese sandwich. Especially when I’ve been sick. Pair it up with a steamy hot bowl of homemade chicken noodle soup and mmm mmm you are good to go! Now, I love your everyday, run of the mill grilled cheese. BUT, I also love to kick it up a little. You might be wondering how I kick up my grilled cheese sandwiches and make them over the top good?

Well, I’ll tell ya. And believe me when I tell you that it is SUPER SIMPLE and SUPER YUMMY! I’ll even tell you the exact recipe for my Grilled Cheese With Tomato and Spicy Avocado-Mayo. I love me some spicy!




But first, lemme tell you a little about this awesome Udi’s Gluten Free bread. K?

I received an uber-fab sampling including Udi’s Gluten Free Foods Whole Wheat Bread, Millet Chia, Omega Flax and Fiber, and White Sandwich bread as well as Cinnamon Raisin    bread and Hamburger buns.

Udi’s uses no preservatives and there are no icky additives. It is all gluten free too. So it is a very heavy, dense bread and a little drier than what you may be used to. But it tastes really great. And when you toast it, it is even better! It made the best grilled cheese sandwiches ever! I especially love the Omega Flax and Fiber. It is really, really good!

Udi’s is available at most whole food/health food stores and sells for around $5 – $6 a loaf.

Along with bread, you can also find:

  • Bagels
  • Breads, Rolls, & Buns
  • Cookies & Brownies
  • Granola
  • Granola Bars
  • Muffins & Cinnamon Rolls
  • Pizza & Crust
  • Tortillas

Now for my grilled cheese. I used Udi’s White Sandwich and Udi’s Omega Flax and Fiber, Sargento Ultra-Thin Colby-Jack Cheese, Tomato and Spicy Avocado-Mayo. I’ve included the recipe for my mayo below. You can adjust the spice/heat level by adding more/less cayenne.

For the sandwich, I added a minuscule amount of butter to one side of each of my slices of bread. Then I add my cheese, tomato and Avocado-Mayo to the NON-buttered sides.

I use a griddle to make my Grilled Cheese. So put your two slices together, buttered side out, and place on your griddle. You can also use a warm skillet or do them under the broiler. Just make sure to brown them on both sides.

That cheese gets so melty and yummy. Ohhhh it was soooooo gooood!

That Spicy Avocado-Mayo really makes this sandwich. My husband isn’t a huge Avocado fan but even he loves this mayo!

Spicy Avocado Mayo 1

Spicy Avocado-Mayo

Ingredients  

  • One Ripe Avocado (pitted and mashed)
  • 1 TBSP Mayonnaise
  • 1/4 tsp Cayenne Pepper (less if you like it milder)
  • 1/4 tsp Lemon Juice
  • Salt & Pepper to taste

Instructions

  • Rinse avocado under running water to remove any dirt
  • Cut in half, removing pit
  • Scoop flesh into bowl and mash with fork
  • Add mayonnaise, cayenne pepper, lemon juice, salt and pepper.
  • Stir and continue mashing avocado until thoroughly mixed and a smooth consistency.
  • Serve on sandwich, crackers, bread, etc.
  • ENJOY!

Well that was easy. You can eat this mayo on your new grilled cheese, on hamburgers and… well… anything!
