Chocolate Peanut Butter No Bake Cookies

When I was growing up, my mom would always make this awesome chocolate oatmeal candy. It is similar to the Chocolate Peanut Butter No Bake Cookies Recipe I am sharing here. The one BIG difference is that she didn’t use peanut butter. Ever. I call it a candy even though most people call it a no-bake cookie. To me, anything cooked on the stove top is a candy.  I don’t know exactly what my mom did because she passed away before I could really learn her method. But hers turned out perfect every single time. They were never runny and they always set up to the perfect consistency. Not too dry. Just right.

Here is my own recipe that I have tweaked. It is a cross between her recipe and some found in cookbooks and works for us. 3 cups of oats is a “base” measurement. I have to alter it every time. i don’t know if humidity plays a role or not, but sometimes I have to add more oats and sometimes 3 cups is just right. You want it to be nice and think and you should be able to tell by the first teaspoonful if it is going to set up or not. If it runs even a little on the wax paper, it needs more oats. add 1/4 cup at a time until you think it is thick enough. Too many and it will be brittle and dry. Seriously, though, go with your gut on this one. Scoop some on a spoon, take a bite (careful it’s hot) and see what you think!

Chocolate Peanut Butter Oatmeal Candy (no-bake cookies)

Ingredients  

  • 2 C Sugar
  • 1 Tbsp. Unsweetened Cocoa (See notes)
  • 3 C Rolled Oats (See notes)
  • 1/4 C Butter
  • 1/2 C Milk
  • 1 tsp. Vanilla
  • Pinch Salt
  • 1/2 C Peanut butter

Instructions

  • Mix together: sugar, cocoa powder, milk and butter
  • Cook on medium heat, stirring constantly, until it starts to boil
  • Boil until butter is thoroughly melted.
  • Remove from heat.
  • Quickly add peanut butter and vanilla.
  • Stir until peanut butter dissolves.
  • Cool for one minute.
  • Add oats, stirring thoroughly.
  • Drop by teaspoonful on wax paper.
  • Cool until set. Aprox. 30 minutes.
