Trim Healthy has some other amazing new mixes out too. I’ve tried the Brownie Mix, Pancake/Waffle Mix and the No Carb Easy Bread and they are fantastic! The brownies are the closest to box mix I’ve found (in my opinion). But, I like them better the next day, after a night in the fridge. Most low carb desserts and breads are like that. The flavors seem to meld and the texture softens. Also, after you’ve mixed the batter, let it sit about 10 – 15 minutes so those alternative flours can soak up some of the moisture. I get good results that way.

One other tip is to run a piece of parchment paper under running water. Let the water drip off so it’s slightly damp and pliable. Then it will lay in your cake pan perfectly. Give it a light spritz of oil. I use olive or avocado. Pour your batter in, even it out and bake. The brownies (or cakes) won’t stick!

There is also a pizza crust mix. I have it but haven’t tried it yet. That’s on my menu for next week. I am looking forward to a simple pepperoni and cheese pizza. I love supreme pizzas but I’m just not in the mood for that. I want old school pepperoni pizza and a side salad. Sounds perfect to me!
