I’d also like to note that this is an older post. Since I now follow the Trim Healthy Mama way of eating, I only eat sprouted bread or true sourdough bread. This Brownberry Bread works great for my family that isn’t on plan with me but still wants a better bread. I also use it, on occasion when I can’t find my preferred brands. The giveaway portion of this older post has now ended.

I have to say that I just had the best sandwich and I had it on a Brownberry Sandwich Thin roll that I purchased with free coupons from Brownberry Bread. For lunch today, I fixed myself a veggie burger. I love them but I was wanting a little something to kick it up a notch so I dug through my fridge and pulled out some ingredients and made myself a healthy spread for it. My own little concoction. I had an avocado that needed to be used as it was super ripe. I was also wanting something lettuce-y on there but didn’t want the typical iceburg. I had some baby spinach that also needed to be used up but I figured that would be messy and fall off. So I got the idea to make a spread out of it. I used my tiny little electric chopper that looks like a mini food processor. I put in one avocado, juice from 1/4 of a lime, a large handful of baby spinach, a dash of cayenne pepper and a dash of salt and black pepper. Then I mixed it all up and put about a tablespoon of it on my sandwich along with some tomato. It was AWESOME! I’ll share the quick recipe below in case you’d like to try it.

The dash of cayenne gave it just a hint of spicy heat and the lime add a bit of tang to it. Then the  avocado mellowed it all out. You couldn’t taste the spinach but it gave a really good texture and was really pretty. I had enough left over for a couple more sandwiches. The Sandwich Thin roll was perfect for my veggie burger too. I have the Healthy Multi-grain variety and they are delicious. They are really soft and tender and have such a great flavor. Each one is only 100 calories and no cholesterol. I’m trying to lower my cholesterol naturally and eat a more plant based diet so that is a plus for me. And they’re not really that expensive. There are 8 pre-sliced rolls in a package and I paid $3.99 for them.

I’ve also been eating Brownberry® BreadCountry Multi-Grain bread. It has 110 calories per slice and doesn’t contain any high fructose corn syrup. And it seems like everything has that in it these days. Some of the grains in it include oats, barley, millet, wheat, rye, brown rice, buckwheat, amaranth and quinoa just to name a few. Those are grains I’ve also been trying to add more of to my diet these days. I got a 1LB bag of it for $4.29 and it will last me 2 weeks in the refrigerator so, for me, it was a good deal. I’m participating in the H3:60 program to get my hormones back on track and to get healthy and one of the recipes they offer is for a healthy blueberry “jam”. So for breakfast, I’ve been toasting up the Brownberry® BreadCountry Multi-Grain bread and adding a bit if the homemade blueberry jam to it. It is heavenly for breakfast!

Ingredients  

  • 1 Ripe Avocado
  • 2 Cups Baby Spinach
  • 1/4 – 1/2 Lime
  • 1 Dash Cayenne Pepper
  • Salt & Pepper To Taste

Instructions

  • Peel avocado and place in small food chopper/processor.
  • Add baby spinach
  • Add lime juice
  • Add spices.
  • Pulse until spinach is pulverized and incorporated throughout avocado.
  • Mixture should be creamy and smooth.

  2. I like Tide dishwashing liquid and Tide! And I like the healthy mutigrain sandwich thins. I use this brand of sandwich thins all the time. And I love making my chicken sandwiches with them!
