I have a delicious and low carb recipe for you today! This recipe uses a Vanilla Bean Bourbon coffee from Fire Dept. Coffee’s Spirit Infused coffees. They offer several varieties of coffee, like Skull-Crushing Espresso, as well, but this particular flavor, and brand works perfectly in this recipe! If you’re like me, you’ve been longing for a rich, decadent single serve cake that will satisfy that sweet tooth. This Vanilla Bean Bourbon Coffee low carb single serve cake recipe really hits the spot!

Vanilla Bean Bourbon Coffee Low Carb Single Serve Cake Recipe

I was recently sent some delicious coffees from Fire Dept. Coffee as a thank you for including them in my recipe. All opinions are my own. The coffees I received are the Vanilla Bean Bourbon Spirit Infused coffee (NON-alcoholic) and the Skull-Crushing Espresso blend. I’ll give more detail about each of the ones I tried, below the recipe.

Now, this low carb single serve cake isn’t a “coffee cake” in the traditional sense. Coffee Cakes typically don’t have coffee in them. They are merely a cinnamon-y cake that pairs well with coffee. This is an actual coffee flavored chocolate cupcake. YUMMMMMMM!!!!!!


Fire Department Coffee

Vanilla Bean Bourbon Coffee Low Carb Cake

Ingredients  

  • 1 Egg
  • 2 TBSP Organic Cacao Powder (See photo below for the Organic Cacao brand I use.)
  • 2 TBSP Monkfruit sweetener (or Erythritol based sweetener of choice (for THM Gentle Sweet or Truvia, use the same amount – for THM Super Sweet or Pyure brand, use half the amount))
  • ½ tsp Baking Powder
  • ½ TBSP Brewed Vanilla Bean Bourbon Coffee
  • ½ tsp Vanilla Extract (You may also add 1/4 tsp coffee extract for even more deep coffee flavor. I omit this.)
  • 1 TBSP Butter (sweet cream real butter – salted, Melted)

Instructions

  • Add egg to large mug and whisk well.
  • Add remaining ingredients.
  • Whisk until everything is well incorporated.
  • Let stand about 1 minute.
  • Microwave for one minute and let cool slightly before serving. Mug will be HOT!
  • Top with a little homemade Caramel Whipped Cream (recipe coming soon) and it is perfection!

Notes

Alternatively, you can bake at 350° for 10 – 15 minutes or until center is just set and a toothpick comes out fairly clean.

NOTE: I prefer to use Monkfruit sweetener (affiliate link) in this recipe. It works well with coffee, versus Stevia based sweeteners which can add to the bitterness and just doesn’t taste as good. However, if you prefer Stevia in your desserts and coffee, you can always use your favorite sweetener instead. There are several sweetener conversion charts online. As a basic rule, Trim Healthy Mama Gentle Sweet and Truvia measure similarly to each other and to Monkfruit sweeteners. Trim Healthy Mama Super Sweet and Pyure Brand (affiliate link) sweeteners are about twice as sweet so you’d only want to use about half of what this recipe calls for. As always, adjust to your desired sweetness level – using more or less depending on how sweet you like things.

I also prefer to use Organic Cacao powder versus regular baking cocoa powder in this recipe. Not only does it have a tremendous amount of health benefits, including magnesium, it just tastes better and brings a richness to this cake that regular cocoa powder doesn’t. It is a little pricey, but considering the amount you get in a bag, it averaged out pretty well! Here is a photo of the brand I get at Walmart and Amazon (affiliate link)

Organic Cacao Powder

I was looking around on the Fire Dept.Coffee website at some of their blends. They have a very wide range in roasts including light, medium, dark, espresso, extra caffeinated, decaf and coffee pods. In their Spirit Infused line, which is what I used here, they have limited editions like this Vanilla Bean Bourbon, Black Cherry Bourbon and Peach Bourbon, Bourbon, Whiskey, Rum and Tequila. I’m trying to imagine a tequila flavor in my coffee and, I must say, it sounds pretty good!

They also have a Coffee Of The Month Club and Spirit Infused Club. They offer some pretty awesome looking merch as well!

The Vanilla Bean Bourbon coffee is smooth and has a very decadent flavor. There is no alcohol in this. It is simply infused with flavor. When I smell it, I don’t get much of a vanilla bean hit, but I do feel like I smell bourbon. It almost has a tobacco scent. It smells REALLY GOOD! I also don’t taste as much vanilla as I’d personally prefer, so I add a touch of vanilla extract or some French Vanilla Nut Pods just to up the vanilla flavor a little. That and a little sweetener makes this my perfect cup! I actually enjoy this coffee a few different ways.

  • For my daily mug, I add some Monkfruit sweetener, 1/2 tsp vanilla flavored MCT oil powder, 1.4 tsp Sunflower Lecithin and a scoop of collagen. It. Is. Perfection.
  • For a dessert after a light S (fats) meal, I add a touch of Monkfruit sweetener and a good splash of heavy cream and 1/2 tsp vanilla extract and it is SO smooth and creamy! This coffee is incredible!
  • When I’m feeling really indulgent, like during our daughters grad party or Clay’s recent birthday, when everyone is having cake and ice cream, this little treat hits the spot!
    • TO MAKE: Brew 8 oz Vanilla Bean Bourbon coffee. Stir in 1 TBSP French Vanilla Nut Pods and 2 – 3 tsp Monkfruit Sweetener. Top with homemade caramel whipped cream (recipe coming next week 😉 ) and sprinkle with a smidge more Cacao Powder.

With that last version, your tongue will slap your brain, it is so rich, creamy and good! This isn’t how you’d want to drink it regularly. It is very rich and calorie heavy. But, for an occasional sugar-free treat, go for it! (Caramel Whipped Cream basically uses homemade sugar free whipped cream and Brooke’s 5 Minute Caramel Sauce recipe. I’ll go into more detail of how I make it next week. But you can play around if you can’t wait.)

The Skull-Crushing Espresso is one our son waned to try. He LOVES rich, dark silky coffees and said this one was right up his alley. He loved the bold flavor and the smooth texture. I’m not as fond of dark roasts but it did smell amazing when it was brewing. We just have a standard drip machine but you can use it in that or an espresso machine. Either works well. Aside from his drinking this coffee, it would be amazing in my Iced Protein Coffee recipe!
