I love celebrating St. Patrick’s Day with my kids. I always try to do something green inspired to make the day a bit more fun. I have some adult beverages here on the blog, but realized I don’t really have anything for the kids or entire family! So, I decided to share our St. Patrick’s Day Ice Cream Float recipe with you all. I call it The Lucky Leprechaun! It is super easy to make and only calls for 4 ingredients! Plus, it’s not a mint flavored float. Not that I don’t like those, but for this, we prefer something more summery tasting.

To make this St. Patrick’s Day Ice Cream Float (full recipe card below) all you need is vanilla ice cream, lemon-lime soda like Sprite, lime sherbet and green cotton candy OR whipped cream (homemade or store bought). We use cotton candy to top a lot of our floats. It’s just fun! If you can’t find green cotton in store, you can try this lime flavored cotton candy on Amazon (affiliate link). Or, you can simply use a little whipped cream and some green sprinkles on top. Just something fun to top your float with.

To make this yummy and festive St. Patrick’s Day Ice Cream Float, I like to use a large glass like this Highball glass or jar. The Highball glasses are the perfect size for an ice cream float or milkshake. Then, you just add 1 scoop of vanilla ice cream and 1 scoop of lime sherbet. Pour your lemon-lime soda over the ice cream, slowly. It will begin to foam and may spill over so pour slowly. Fill it to the top with your soda then top with a big hunk of green cotton candy! If you’re using whipped cream, instead, give a good squirt or large spoonful on there and top with some green sprinkles. Either way is delicious!

Ingredients  

  • 1 scoop Vanilla Ice Cream
  • 1 scoop Lime Sherbet
  • 3 ounces Lemon-Lime Soda ((3 – 4 oz) ie: Sprite, 7-Up)
  • 1 handful Green Cotton Candy
  • Whipped cream (optional)
  • Green sprinkles (optional)

Instructions

  • Add 1 scoop of ice cream to glass
  • Add 1 scoop of lime sherbet to glass
  • Top with lemon-lime soda
  • Top with green cotton candy OR whipped cream and green sprinkles
  • Add a cute straw and enjoy!

Notes

To make an alcohol version, simply add 1 shot of your favorite vodka, then finish topping with a lemon-lime soda.
